Recipe: "No Tomato" Sauce

"No Tomato" Sauce

1 1-pound can beets, drained well
1 1-pound can carrots, drained
2 TBS. lemon juice
1 cup water
1 TBS. parsley
1 TBS. cornstarch or arrowroot, optional
1 1/2 tsp.salt
1/2 tsp. oregano
1 tsp.basil
1/2 tsp. garlic powder
1/2 tsp. sugar, optional

Place the first 4 ingredients into a blender container or food processor bowl.
Then add the remaining ingredients, after you have combined them together.
Puree completely, until there are no chunks of carrots or beets left.
Let sit for several hours in the refrigerator for flavors to blend.
Use in any recipe that calls for tomato sauce (spaghetti, lasagna, pizza, fish
creole, vegetable soup, etc.)

This looks extremely close to tomato sauce and tastes very much like it also!
