... is that the enzyme used to pre-treat the milk in making mozzarella helps make mozzarella more digestible for O's and A's. String cheese, however, doesn't stop there. It's subjected to further processes involving extrusion under high pressure, which is generally not a healthful thing to do to fats and proteins as it can alter molecular structure. Then the stuff has to be pressed again to smoosh it into those little logs that you peel the strings off of. Attractive, eh?
