Jerusalem artichokes good for diabetes

Hi Bob, Jerusalem artichokes are great. I used to eat them a lot before ER4YT and loved them. The crunch in a salad is wonderful. I never got gas, but I never ate a lot at a time. They can also be steamed in which case they then have the texture and taste of a regular white potato (Os take note!). Another interesting thing about them, Edgar Cayce recommended their ingestion several times a week if one was diabetic, because they are a natural form of insulin. Those people on ER4YT who are struggling with diabetes and are allowed to eat them just might like to see what happens when they eat them (both raw and cooked).
