Spelt for cookies...

I'm finding spelt flour a great substitute for most cookie recipes... Had a ball with it over the holidays. Made a great White-Chocolate-Macadamia Nut cookie by subbing spelt flour for wheat. It was a bit nuttier, almost like an oatmeal cookie and not an exact duplication of the wheat version, but I actually liked it much better. What I'm struggling with, tho is substitutes for vanilla. According to ER4YT book, O's can't have vanilla. Other extracts are fine substitutes for some recipes, but actually distracting for others. I've just been using vanilla sparingly, but would love other suggestions.
