Need help adapting a recipe for O

Hi guys,
My mother-in-law bakes this wonderful dark moist chocolate cake that my husband, a B, loves. The recipe calls for 2 cups of hot coffee in addition to the cocoa. I am an O and would like to have a piece sometimes, but how do I substitute for that coffee avoid and still maintain the same flavor? Also, does anybody have a good recipe for vanilla frosting? Hubby is addicted to Betty Crocker and I don't like the additives in that.
