JPO's Tofu Pumpkin Pie DEDICATED TO JON (A+)

Okay, here it is:

1 large can of Libby's solid back pumpkin (large enough for 2 pies. The can size is something like 30 ounces.) or 2 small cans of Libby's solid pack pumpkin

1 pound soft tofu
6 - 10 egg whites (the more the better, in my opinion)
1/2 cup of maple syrup (*some people may want to add more maple syrup. If so, increment in amounts of 1 tblsp.)

2 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp ground clove

1 Pilsbury pie crust. If you are allergic to wheat, you'll need enough substitute pie crust for two pies.

Put the Pilsbury pie crust between sheets of waxed paper and roll it and roll it and roll it. If you roll it very thin, you can use it to line two pie plates, and that will save you a whole bunch of calories. It also cuts down on the amount of wheat you are eating.

Line the pie plates and pre heat the oven to 400 degrees F. Cut up the tofu into chunks. In a blender or food processor, whirl the tofu very fast with the egg whites, maple syrup, and all the spices. You must do the tofu in a blender or food processor to cream itbecause a hand mixer is not fast enough. If you try to cream it ina hand mixer, your pumpkin pie comes out all curdy. Believe, I know.

Anyway, after you have whirled everything at high speed, put the solid pack pumpkin into a large bowl and pour the tofu-eggwhite-syrup-spice liquid over it. Then you can use a hand mixer and mix it all by hand.

Pour the pie batter into the lined pie plates and crimp the edges of the dough.

Put the pies into the over and bake them at 400 for 15 minutes. Then turn the heat down to 350 and bake them for 40 - 50 minutes.

If you use one Pilsbury crust for two pies, you come out with two pies that are roughly a total of 1,000 calories each (2,000 total). If you use an entire Pilsbury crust for one pie (and use half of the recipe for one pie) the one pie will be 1,500 calories.


This version is dedicated to Michael:

After you whirl the tofu, egg whites, and maple syrup, add in 1 lb of ground beef and some raw sheep's blood (uncongealed).

Whirl again until the mixture is nicely marbles. Pour it into the mixing bowl over the pumpkin. But in this recipe, substitute barbecued pork for pumpkin. Mix by hand, and pour into the pie plates. Bake as directed above.
