Kristin, I wonder how many people noticed the link at the bottom of your message. I did and read the whole thing. I've used tofu off and on for many years and always worried a little about the overprocessing of plain tofu.
While Stephen explained the thing about phytates, I'm still concerned about the way tofu and many other tofu products are made. Here's part of a sentence from the report which I did not like: "...the alkaline soaking solution produces a carcinogen, lysinealine, and reduces the cystine content, which is already low in the soybean. Lacking cystine, the entire protein complex of the soybean becomes useless unless the diet is fortified with cystine-rich meat, eggs, or dairy products."
Stephen can you address this one, too?
