What makes mozerella neutral for O's?

Why is it that mozerella cheese is a neutral (in small quantities!!) when every other cow-milk cheese is an avoid? The feta I understand - it's made of goat milk, and therefore a completely different beast; but why mozerella, but not, say, gruyere?

I'm in cheese-lover's hell right now. sob. sniff.
