I hope others can address your questions item by item. Garlic has a number of active ingredients. Dehydrating or cooking causes some of them to be lost. My oncologist wants me to eat whole (crushed or chopped is OK) raw garlic frequently for its anti-cancer properties. Dried garlic and garlic oils do not have the same effect.
Garlic cloves are nearly as easy to store as a powder; the cloves (with the husks still on) can be kept in a ceramic jar for weeks or months.
