Dehytrating

Another A issue ~ but open to all to enlighten me.
Onions, Garlic, Celery, and other foods are surely better fresh, but come in powders or dehydrated forms. These are a total pain for me to keep. Does anyone know if I can use onion powder and get the same results? I don't press my garlic, I use garlic powder. Am I defeating myself here??
Same with dried vegetables. Do you know if dried vegetables will give me the same benefit? And - do you know if it makes a significant difference if I buy them dried, or if I buy the veggies well - fruit too I guess) and dehydrate them myself. This confuses me... back to the grapes vs. raisins. Will I turn an HB into a Neutral by dehydrating it? I love berries, period, any kind any flavor...
but (as suggested) are my blueberries going to still be HB once I've dehydrated them? OR.... will some of those neutrals (like the grapes) become HB when dried???? AND AND AND in this same mentality.... would this mean I could use dehydrated tomatos???? Afterall.... it's all dried up, no acid... right?
This is essential to me as I will be much more likely to eat all the things I'm sposed to if I can go get them, dry them out, and store them in jars for three weeks from now.
So... what I'm looking for is how will dehydrating or canning change our HB and Neutral foods??!!
