Sorry about the mush! Was the buckwheat roasted? If not, brown lightly in a hot cast iron skillet (stir continuously) for a few minutes. You can usually buy the whole buckwheat roasted or unroasted, but it cooks up a lot better as a grain if it is roated and gives it a very nice flavor.
