I haven't been visiting the board lately, tho I have been keeping up with you all from the digests. In my absence (since Xmas) I see another O+ 40 yr old Deb has been visiting & a couple of Deborahs. So to distinguish myself, I thought I'd use "NZ Deb" from now on.
I always used to love marinated fish in coconut milk, but no coconut milk for me now. I tried just marinating fish in lemon juice and adding it to salads, but it wasn't that nice. So I had this idea that grinding up almonds and blending them with plain rice milk might work. It had a different flavour, but was yummy.
For 4 people I used about 600-700gms cod (other allowed fish would be fine), marinated it in the juice of about 5-6 lemons for 24 hours. Ground up 48 almonds, then blended with a small container of rice milk. Drained the fish, added the milk and a chopped up red onion. Then add a big pile of chopped up salad veges, and there's dinner!
For zoners, this gives about 4P, 4F & 1C each before adding salad veges. For people who can't take the rice milk, blending up the almonds with water would probably still work.
I gather people are having trouble with the recipe exchange, so thought I'd post this here instead. Haven't checked whether this suits other types.
