I don't know the answer to your second question, but I think "rolled" oats just means they are flattened with some kind of roller. If there were wheat in them, they'd probably have to say so. I bought steel-cut oats without realizing what I was doing, and they are nothing like rolled oats - take forever to cook and you can't use them in granola!
