Hey! We can do the same thing with carrots. While in Branson, MO our family enjoyed a concoction of potatoes, sweet potatoes, and onions all cooked together in a huge pan over an open fire (before ER4YT in my life). My type A daughter and I were groaning over not being able to eat that any more - especially the sweet potatoes. We decided to try it with carrots. It was really good. We didn't use any type of potatoes of course. But we did mix our carrots with okra. It was so good we had it again a few days later. The oven method sounds good, too. We'll have to try it - with carrots naturally.
