wow, that's a lot to have going on at once!
I think the first thing to do is get rid of all things that aggravate the celiac disease and then A avoids. Take the foods that are left (which will mostly be vegetables and fruits, I assume) and put them in Zone meals. An quick and easy way to do the Zone is to make sure each meal includes:
*A protein food (for As this can be soy or some types of fish and occasionally poultry).
*A few cups of non-starchy vegetables, a huge salad OR a moderate portion of a starchy vegetable (that's right for your type!).
*A small amount (12 grams or less) of fat: olive oil, or nuts appropriate to your type.
*A piece of fruit for dessert.
It's not "Zone Precision" at its best, but it will still give you results.
