One breakfast I like is a veggie scramble. (I'm an O). Usually I sautee onions, peppers of any color(except brown!), spinach or other greens and sometimes any other vegetable I feel like. Then I add them to the organic free-range eggs I am scrambling. For a real feast, I also add cut up free-range chicken sausage, or have a small steak alongside. At least 50% of this tasty pile is vegetation, and I enjoy it a great deal while my cholesterol drops from the formerly high levels I had when I was vegan. Adjust portion size to your metabolism and activity level. In my vegan days, I used to use tofu to make the scramble (using a dash of turmeric for color) and I suppose some Os could get away with this, but not this one.
