A book called "Get the Sugar Out" says the best substitutes for sugar are real maple syrup and honey, as unrefined as you can get, and a sweetener called "Sucanat" that they have in health food stores- it's made from water evaporated from sugar cane, I think. I don't really remember, but the good thing about it is that you can substitute it 1:1 for sugar, which would be good for baking.

And, if you really want to learn enough about sugar to make you so horrified that you'll never want it again, read "Sugar Blues."
