Try roasted vegetables. It gives them a different flavor. I roast vegs on a Sunday and heat up leftovers in the microwave during the week. Set oven at 350 degrees and roast 45 minutes to an hour depending on the veg and how big the pieces are.
I like these combinations:
Sweet potatoes, onions, carrots, garlic (smashed up), sweet basil and olive oil, salt
Sweet potatoes, onions, carrots, rutabagas, butter and a tablespoon of pepper jelly, salt
