I think the reason many people feel good when they begin vegetarian-vegan diets is not so much the absence of animal protein, but rather the overall improvement in the quality of food they eat. Veganism and food awareness usually go hand in hand. So, when you eliminate all the junk food and start eating more fruits, vegetables and whole grains, naturally you feel a little better. However, as time goes by, certain effects of nutritional deficiencies begin to show up, especially if your body is the type that does well on animal protein. Vegans and vegetarians often consume too many carbohydrates in the form of grains, bread, potatoes, pasta, etc. The effects of doing this take time to show up. Sometimes, months or even years. Then, when problems arise, they wonder why because the diet used to appear to work for them.
