Well, for me, two slices of E bread would be two too many! I still see a lot of carbs in your diet - rice milk is loaded with sugars, and rice flour and crackers still add to your carb intake. I think for me, the crucial understanding of this way of eating was seeing the BIG PICTURE - that is - very low carbs, no matter what they are! You can eat all the HBs you want, and it won't matter if you're still eating sweet, carbohydrate laden foods. You might try cutting more carbs out...see if it works!
