I'm wondering if after i open a can of salmon if i can freeze some of it?.  I'm trying to figure out less expensive ways of getting fish into my diet, i have been buying sardines but they are $1.50 a can.  Sometimes i can get a big can of salmon for $2.00, but alot of times a good portion of it doesn't get used before it goes bad.  I like salmon but don't want to eat it for days, so would it be ok to freeze the portion i know i won't be eating right away so i can have for another time?.

I've done that - make a dish that will serve for two  meals and freeze the leftovers for a later week.

Seems okay. Use the wild salmon (Alaska) for good texture as well as the obvious health reasons.

Sometimes I make simple patties from Alaskan Salmon and freeze them to have for a quick meal. My entire family LOVES them. You can even stick them in the toaster to "renew" the crispness. I fry them in olive or rice bran oil at medium heat for about 3.5 min. with the lid on, turn and cook another 3 min. or so without the lid. That way they don't dry out so much. Delicious with tomato soup - but I have to seriously limit the amount of that for myself! My 5 year old grandson loves to drink it through a straw. (smile)

I've never tried freezing plain canned salmon, but I have used it in cooking (such as salmon patties) and frozen the leftovers.

Yes.  You can freeze it prior to or after preparing it.  Since it is cooked already, there is very little degradation. Keep as much of the original liquid around it when freezing to keep it from being freezer burned, if it remains in the freezer that long.

Thanks for all your help!

I wonder how the texture would be after it was frozen?.  I mainly like to use it on salads or in place of tuna for sandwiches, etc...  I have made those salmon patties before, but mine didn't turn out really well i'll have to give them another try.  ;)

I would think it would be like any other cooked frozen fish. Mine is always flaky and delicious!  :)
