I bought a book just about hot sauces recently. I'll try to suggest substitutes for the B avoids. The first is a nacho sauce that they suggest could be used with pasta, I'm thinking a spiral rice pasta casserole mac n cheese style.

Nacho Sauce
1 cup shredded sharp cheddar cheese
3 tablespoons corn starch, I have arrow root starch
1 cup milk
1 tablespoon dry mustard
2 tablespoons cream cheese(neuchaftel)
2 teaspoons Hot Sauce, I have a recipe that I could make using cayenne peppers and apple cider vinegar or I could add a half habanero minced fine
2 red or green jalapeƱos finely diced
salt and pepper to taste

mix together the cheddar, the starch, the dry mustard in a heatproof bowl and set aside
put milk into a sauce pan and bring it into a boil, stir a 1/4 cup into the cheese mixture string until blended. add the cheese mixture to the milk whisking vigorously. Return it to a boil then reduce heat and simmer while whisking for 5 minutes. Remove from heat and stir in cream or neuchaftel cheese and hot sauce. Season with salt and pepper then stir in chiles.

use arrow root instead of corn starch....etc
