Maybe these have been discovered already here, but not to my knowledge. I ordered them from Amazon…Rees Bros. (sp?) Will let everyone(!!) know how they come out in a stir fry dish!! ;D ;D

Remember, too, there's a gizmo that processes some vegetables into spaghetti noodles/ strands. Many use it for zucchini, but maybe it's doable with sweet potatoes, too?

job chae (also spelled japchae, jabchae, chapchae, chopchae or jobchae), Korean-style stir fried noodles and vegetables.

Excellent, glad you've found these! I'm lucky enough to get two varieties in my local oriental supermarket: plain ones (just sweet potato starch and water) and tomato ones (same as the others but with tomato juice added instead of water). They're great in stir-frys. Yum!

The sweet potato "noodles" are a totally different texture - and also transparent - from what most westerners think of as noodles.

EDEN brands does make a 100% buckwheat pasta.  If you can have buckwheat, here it is:
