Is there a huge difference in potato starch and potato flour? I'm type A nonnie and sometimes i'll find something with all the right ingredients except it has potato starch. I'm just wondering if eating something like that is better than eating something like french fries or something that has potato flour listed as an ingredient.

I've personally found that potato starch screws up my blood sugar control the way that sugar can, but it doesn't affect my pain levels the way that whole potatoes (or potato flour) can.

It's definitely better than eating french fries, but still not a good choice. There's no way to tell how potato starch will affect you personally. And I share your frustration with trying to find potato, corn, and wheat free foods. I've basically given up on finding any ready-made "gluten free" baked goods. If I occasionally find one  I can eat, it's a bonus. Mary's Gone Crackers makes some nice products.

I doubt there is much difference between the two.  I assume all potato products have the lectin, so it comes down to a problem of quantity - and how a small quantity versus a large quantity affects you.  A product with more potato will probably be more problematic than a product with very little.  It is possible that a very small amount will be mostly tolerated so that you feel no negative affects, but there is no telling how much damage is done to the bioflora, etc. from a small amount...

Potato is potato is potato.  If I eat any form of white potatoes, even a tiny tiny bit, I know I will be back in "pain mode" for a couple of days.

One time by mistake I bought a quart of organic chicken broth that was not the Imagine brand I normally buy.  I used it to make soup and the next day I was mostly in bed in pain..........THEN I read the ingredients.  YEP - it contained potato starch.

Now you know there can't be hardly any in a quart of broth.  

Some avoids are worth really avoiding completely.
