Anyone know of a good source for organic artichoke pasta that is not made with durum semolina?

It is difficult to find without at least some wheat & reports are that when you do find it that it tastes awful.

I searched for this in the UK, but can't seem to get it, without other avoids e.g. wheat so bought rice pasta instead.

You'd think they would experiment with making it with rice instead of wheat for all of us out here that cannot have wheat.

has anyone cooked with the flour?

As I understand it, artichoke flour and pure artichoke pasta are made from Jerusalem artichokes which are a tuber and not anywhere the same as the "thistle" shaped artichokes.  

My husband gets extreme diarrhea from eating even a tiny bit of the Jerusalem artichokes, so even though we are both A's I do not use them in any form anymore.  Yes, they are listed as a beneficial - but sometimes our bodies can't tolerate certain foods no matter where they appear on "the list".

Well the Artichoke Flour is listed are a Diamond on my Swami so that's why I've been on the hunt!  I'll see if I can find 'uses' for the flour on the web.

I'd imagine you could blend the artichoke flour with other, milder flavored flours (such as brown rice) in baking.

With the prices from the sources that I listed, one would have to do blending to be able to afford using it.
