Do you mean potato flour or potato starch?

Does your diet include white potatoes? If so, I would take that to mean potato flour.  But I never heard
the term potato flour so is this what your SWAMI says or something you've interpreted to be an
ingredient that would taste the same as potatoes?  Potato starch is more of a binder.  It can thicken
other foods that contain liquid, much like corn starch would.  You could make a gravy out of potato
starch or even a cake but there would usually be other ingredients that gave the recipe it's bulk or texture.

Not sure potato starch would become a major player in a pancake.  I'm thinking you might need
to combine this ingredient with some grated vegetables like carrots, onions and zucchini and then add some potato starch along with eggs to make a batter.  Then fry like pancakes.

Sometimes when I bake very crisp cookies I use 25 -30 % potato starch flour as it is called in DK- I don´t think you can use it 100 % .
I have seen potato fibre -used in low carb reipes :-/
most B´s can eat potato btw
You can make very nice potato pancakes with mashed potatoes, eggs and maybe a little flour.

Any pancake receipe replacing equal amounts of flour with a flour mixture.

Keep this four mixture on hand by mixing together:
6 c rice flour
2 c potato starch
1 c tapioca flour

And use it in place of flour. Be sure its okay for your blood type.
