Homemade Almond Milk

The proportion of almonds in that recipe is typical of the recipes you find on line.  I view it as more of an almond cream. Considering the price of almonds, it is an expensive "milk".  

When I make almond milk I soak 1 cup of almonds for 8 hours, drain them, don't bother to pop the skins:  that's way too much work!  I put the drained and rinsed almonds in my Vita Mix with 2 whole seeded dates, 2 cups of water and blend thoroughly.  Then I add 4 - 5 more cups of water and mix that together. After pouring this mixture through a nut milk bag and squeezing it "dry" I add 1/2 tsp organic vanilla extract.  

This makes almost 2 quarts of almond milk.  AND it still has a lot more almonds in it than a half gallon of the "almond milk" you buy in the store which is full of things like carrageenan and vegetable gums, all of which are disastrous for our health.

I have a cup of almonds soaking right now and we will have delicious vanilla almond milk all nicely chilled for tomorrow morning's breakfast.

You can grind the almonds in a coffee grinder.Only takes a few seconds. You get less waste and no need to soaking.

I made almond milk for several years by soaking almonds overnight, rinsing, blending in the skins with 4 times the amount of water and straining well in very fine stainless mesh.  very easy.

Add water to almond butter and you've got instant almond milk.

But I usually make it the way GinnyTN does.

ooo! next kitchen culinary I will buy (woot) I tried drinking the sludge last time but would rather leave it out. I assume using jujubes instead of dates would work as well. Or, a dried fruit like a prune or fig with stone removed.

Yum! Thanks for posting this C_sharp. There's nothing like the first root veggie soup of fall :) Sometimes I like to add a little chopped browned lamb or turkey sausage to the soup after it's made. So good on a cold blustery day :)

You do as you use to.  The only thing that changes is that you put the almonds grinded.  Then you blend with water, strain and add whatever you want. This way you obtain more with fewer almonds. I think so but I am not an expert because I don’t make almond milk (as an A I use soy milk) but recently I did it once and it turned out good and easy without soaking.

Do you wash/rinse your quinoa thoroughly in clear - preferably filtered water- before you cook it?

Quinoa has a natural saponin coating that tastes like soap.  If you don't wash it off before you cook it you will find  doe NOT taste good at all.  

I really like it made into Tabbouleh, which is a Lebanese salad with lots of parsley, chopped green onions, raw garlic and usually tomatoes.  I use roasted red peppers in place of the tomatoes.  There are several recipes on line for this salad, but most of them don't call for enough parsley.
