We have been eating eggs almost every morning. As O's that works for us. Maybe you could make a granola with the oatmeal. I also like a breakfast "rice pudding"   Now that winter is coming pumpkin pudding sounds nice.  Don't know your foods. perhaps these idea will help.

How do you make this - or is it in the recipe database? I have some pumpkin in the fridge.

I use any pudding recipe (from scratch)   like to use hemp milk because it high in protein)  also I add walnut. If you don't want eggs, you can use chia or flax seeds. I'll take a quick look up at the database, I believe there is a recipe there.

We also enjoy what we call breakfast breads. (nut, seeds and dried fruit added to any quick breads of your choosing)

I make a protein shake in the morning when I’m home.  Eggs or oatmeal when I’m traveling.

As a B (and the originator of the aforementioned thread), the oatmeals/ cereals/ rice pudding breakfasts "work" only as occasionals.
For me, it's all about Protein.
But you have to know why you're eating breakfast.
If you want energy that'll take you through more than a couple of hours, it's Protein.
If you need to Break-the-Fast and replenish, it's about Protein.
But if you're just mildly hungry and need a quick fix, those starches can tide you over until you go for the more serious fuel.

Yes, check out the thread.
For breakfast protein, anything goes: Eggs are great. Omelettes, fortified with cheese (We Are B's - Yay!). There are some turkey bacons/ sausages that are good, too.
Nut butter on a compliant bread-form.
Leftover meat and vegetables. Sliced turkey.
Salmon, tuna.

I don't know your "health issues", but It's Good to be B.  :)
