I know that many have used beets for faux tomato sauce.
What other substitutions have folks used beets for?

A friend told me today how wonderful is chopped dill in beetroot salad: diced cooked beets, evoo, lemon juice, crushed garlic, chopped dill.

Cold soup with yoghurt and dill ( had that several times this hot summer.

With feta cheese as a salad

with horseradish cream as a salad - very good with roast beef.

I also made a very nice dish where you sliced them thin, added oregano and garlic and lots of heavy cream add baked in medium oven for aprox 1 hr.

I kind of like beets;) -I grow both yellow beets( that taste a bit like sweetcorn ;) and red round egyptian beets.

I watched the show where Hugh cooked it but couldn´t find the recipe :)

It was on our national tv- so no link.
But I do love the river cottage series.

I think it was in the series about Vegetable
I don´t know If you can find it online- I can only find UK links where you have to live in UK  :(

Lots of favorites, but one thing often done in my household is to cook beets  then put them in the food processor with some butter/ghee, and favorite herbs (rosemary is nice). Some times we do a platter with Mashed Roots.
Your choice of:

sweet potato
beets
rutabaga
parsnips
turnips

all cooked in the above way but separately, then arranged in mounds on the plate with dabs of butter on top. Don't over cook them. Steaming, sauteing  or even roasting (don't let them get too crusty on the outside) works quite well, especally for the turnips, parnips and rutabaga, which tend to get bitter and/or soggy when boiled, especially in too much water or for too long.

The other way we sometimes do is to do beets, sweet potatoes and parsnips, put them on the plate close together, then "swirl' them together-- very pretty, and the mixed flavors are rather nice.

I bought "Beet Chips" the last time I was at Whole Foods. They were cooked with oil, so they weren't the best with cheese (the application I'd planned). I found that the oily beet chips had to be salted by me quite a bit, for balance. Another use: Crumbled over a slaw/salad with a lemony dressing.

I'd have preferred them with salt only, through a dehydrator. If these were roasted, it was with too much oil.  :-/
