This year I am fulfilling my lifelong wish to visit Iceland-yey!! 8)

I am slightly worried if I will be able to manage foodwise as a lot of the overnight accommodations seem to be in farm houses and hostels around the lesser known routes.

Has anyone of you been to Iceland?

Will I have to stick to the Hotels (which would make the trip a lot more expensive) or would I be able to buy what I need en route?

Also, a lot of the dishes seem to include potatoes. Would rice be generally on a menu?? ??)

For example: here in Ireland we are fond of Chicken Curry, so even in a typical Irish Pub the kitchen would have rice.

when I went to Iceland everything was very expensive. exchange rate is more favorable now.  I did carry food with me to the remote locations. grocery stores were available, but often only had limited selections.  some places had rice but it was certainly not universal and not all that normal in their cuisine.

you are an O and secretor, would stick with animal type proteins incl fish/seafood and vegetables if possible - a dollop of ghee/butter or olive oil good.  If grains are there, then rice is the best and easiest to digest - grains not necessary really.  Maybe, take some almond nuts and walnuts in case you need a snack when you are out or waiting at airports, low gi dried fruit like prunes or dried peaches.
try to avoid white potatoes due all the anti-nutrients in white potatoes such as saponins, and those potatoes make your blood sugar spike too.  You need energy, so have other root veg if possible, and greens.  Have not been there, so sorry, can't help that much.  Eat their traditional diet whilst there, and avoid fast or processed foods if possible.

Lots of fish (even pictured on all the money).  whale meat is available too, but that is not rated.  

Ghee is not readily available in most places. butter is available. If it is produced in iceland it should be hormone/antibiotic free. (Smjor is the major icelandic brand)  Icelandic butter is supposed to make great ghee if you are set up make it.

Some unique cheeses.  Lots of skyr--so you may want check rating of this for you.

Depending on what Roseanna advises me, I will definitely pack some 'trail mix' and maybe some ricecakes in case- at least they are light  ;D

If possible, skip the starches & go high protein.
How long will you be there?

Have you ever been in Chicago? I met a Yvonne from Ireland whose husband was a professor, but haven't seen her for a few years, so figured they moved.  Just askin' cuz you never know!

Nope, not me  ;D

I'll be there for 10 days, bringing Deflect and Polflora  :)
The advise about the avoids makes sense, but I do really hope to not have to resort to that  :-/ Altering Black-dots would be better.

You'll only be there 10 days.
I say: Make sure you taste every distinctly regional dish you possibly can (in lieu of ordering dishes you can get somewhere else on the globe), irrespective of whether or not it "contains an avoid" -- you may never get to Iceland again, and you may want to taste and then (at home) reinterpret/reconfigure the once-in-a-lifetime-experienced recipe into something you/your family can enjoy more regularly.
The memories of regional dishes enjoyed on site (especially when with locals, or homemade by locals) will never leave you --- and that's what travel is about, every bit as much as the sights, IMO.
