MMMmmmmmmm it's all about the CRUST :P but that's true; if its not a grain or bean, most likely the answer is a seed or nut.

I usually grind up walnuts and or pecans with a small amount of compliant sweetener, just enough to make it stick together, and spices and press into a greased pan. The crust will stick due to the melting of the sweetener so make sure to grease the pan. Maybe adding an egg will work too, yet I haven't tried it that way. Prebake for about 20 min just like any other crust. A good alternative to the egg is soaked flax seeds, they hold the mixture together well too.

I just grind up pecans and press into a pie plate that I've greased with ghee. I don't precook it. I've used it for pumpkin pie many many times and my sons actually like it better than regular crust. Depending on the pecans sometimes I add a little turbinado sugar.

I use the crust only as I can't do coconut milk either. That's the great thing with having some cooking experience under our belts, we can tweak recipes! :)

Thank you very much for that Dianne; I must try the chia seed "mousse" inside of it after the pumpkin! All my filling will need now is nut or buffalo milk. :P Oh this sounds so decadent....
