Chopped up sweet potato in a frying pan with a little bit of olive oil, lots of garlic and onions has got to be the best food Ive ever eaten :)  New favorite!

Properly prepared sweet potato is a very good food...  Too bad I spent so many years eating them with the "mandatory" marshmallow topping and hating them...

Potatoes and sweet potatoes are Swami avoids for me. I wonder how pumpkin would work.

I just recommended Sweet Potato as a vegetable to be subjected to the "spaghetti maker" gadget used for Zucchini, on the Zucchini Spaghetti Maker thread.
I was reading the menu of a new restaurant earlier and noted sweet potato noodles in a porcini mushroom broth with Japanese pork. It was the noodles (B that I am!) that called to my soul.  ;)

My husband loves to make fried potatoes but since they are an avoid for me he experimented and tried sweet potatoes.  So delish!

I make roasted sweet potatoes: cut into cubes, add olive oil, sea salt, garlic powder, onion powder, and paprika. Roast until crispy!

It would probably work with fresh onion and garlic instead of the dried spices, but my kids prefer the texture of the spices.

Have you seen all the sweet potato recipes at this site's Recipe Center?
Just click on "Recipe Center" under the Online Support Button on the dark blue menu bar, above.
Type Sweet Potato, when you arrive there.  :)

Oh yeah! Another daily eater of sweet pots.

I have been so fortunate that my market now carries three varieties: The usual orange flesh, as well as a "white" sweet potato and now one that is in-between! Roasted, baked, sauteed in the pan, sliced in a casserole, it's all good!

Confession: Sometimes I eat them twice a day and when I do eat them I consume a few at a time.

I must be one of the last persons left on earth who still likes them sweetened a little (agave) with a few drops of soy sauce. Not exactly haute cuisine, I know, but at least no marshmallows! :)

When we were little kids (in the 1950s/60s) the marshmallows were an attractive feature, and something we looked forward to once a year (i.e., at Thanksgiving dinner); they were by no means part of any and every sweet potato dish otherwise.

I don't equally enjoy all varieties of sweet potatoes.  The dark orange flesh ones that are called jewel or garnet around here seem to be too watery in texture and containing strings.

My favorite are the old fashioned sweet potatoes that have a tan skin and yellow, dense flesh.  They range from only moderately sweet (good variety for fried potatoes or savory dishes) to intensely sweet (dessert-like).  It seems to depend on the time of year here as to which is available.  I like them baked in their skins and eaten with ghee.   :P

I see I need to branch out!  :)

Does anyone know the difference between sweet potatoes and yams? I'm assuming the beauregard yam is what we most often refer to as the "old fashion classic", but My Organic Market (MOM's) and Whole Foods sells jewel, garnet, and Japanese sweet potato, as well as beauregard sweet potato, which sounds like a mash-up. No pun intended.

I thought there was a difference.   ??)

Beauregard is most definitely a sweet potato. In the US allmost anything that is called a yam is actually a sweet potato.

The thing about sweet potatoes is: They pair well with poultry, but not as well with fish or red meat. I generally served them only with poultry (as the protein), whose relative blandness can tolerate the sheer sweetness of this vegetable.
That said, there are hundreds of ways to make such a pairing very interesting indeed.
Pumpkin figures into a number of the world's cuisines, and sweet potatoes can be used in "similar" combinations.
Sweet potato pancakes with a light fruit &/or dairy sauce/dip make a great snack.
Their density and sweetness are well balanced by bitter, pungent, and acidic tastes, too.

Salmon works really well with sweet potatoes. Both have deep, earthy notes that compliment well.  What I call "autumn tones"
No other fish, as you've said san j, works at all IMO.

I serve sweet potatoes and/or carrots with beef all the time. When you use savory spices with the sweet potatoes, they end up "flavorful" rather than "sweet." Did I already share my roasted sweet potato recipe on this thread? Just peel and cube the veggies, roast with olive oil, sea salt, onion powder, garlic powder, and paprika.

We make that dish frequently- with roasted turkey breast, with beef burgers, with sauteed  ground beef, with sauteed turkey tenderloins. About the only dinner I wouldn't pair that with is pizza.

My sister in law tossed some into the microwave as is. I could not believe the difference in taste. Very rich and tasted like she added spice but did n't.

Also, tzimmes, a traditional Eastern European Jewish food commonly served for the Jewish New Year (coming up this Sunday night through Tuesday)

It's chunks of beef, with assorted dried or fresh fruits and carrots and/or sweet potatoes, cooked slowly over a low heat (in the oven or stovetop, whatever you have available.) Hundreds of variations exist- some add unhealthy ingredients like margarine and brown sugar, some use potatoes in there too ,etc. Mine is chunks of beef with carrots, sweet potatoes, and raisins, and sometimes dried apricots if I have any on hand.
