:P Lamb and egg breakfast today, Sunday! (and I hope the Sundays to come!  :P

I used Quail eggs. (takes 4 dozen to make a decent omelet!) LOL  My mother laughed when she saw them.

How to handle the tougher membranes on these eggs when we crack them open  ??)
Will the boiled game egg be harder to peel, for a cold salad or snack ::)?

Where did you find quail eggs? I've only ever seen chicken and duck eggs for sale (the latter only at farmer's markets.)

don't know about game eggs, but with fresh eggs, when boiled their shells stick. My dad says to put them in ice water as soon as you take them out of the pan. Eggs keep a long time in the ref.  so if you have any that are 1 or 2 week old use them to boil, their shells will separate easier.

I know people in CA raise quail and these are where they came from. I get them at a big oriental supermarket here. The quail eggs are about half an inch tall apiece with big tan and brown spots, making them look dirty, when they are actually clean. One dozen weighs 4 ounces.

This carton says "Jong's Egg Ranch, Ontario, CA."

I had a quail egg raw with my sushi once.  It was a topping for my salmon roe.
