If vinegar is bad, is Kombucha alright? It has healthy probiotics!!

This doesn't help me! I am 18 and Swami is too expensive and complicated!

then go to the library
find out your genotype, using the advanced calculator in the book and check how kombucha is rated......

all in all, no extra expense

I am an O Explorer and my husband an O Hunter and we both get it as a Diamond with our SWAMIS. I don't know about the O Gatherers though. I may ours and we both drink about 16 ounces each daily. Hope this helps. Do you have a bit of an idea what genotype you may be by some the descriptions you may have read about on this site?  :)

I've been making it the past several months and drinking a good bit of it. I can't tell any health benefit whatsoever.

With respect to ER4YT, you should look to see if black tea is an avoid for your blood type. If not, kombucha should be okay. As I understand it, the yeast component of the SCOBY is not conducive to C. albicans. I'm a type O and I've had kombucha previously without any problem (probably helps that it's noted as a neutral for my GT). Anyhow, not a lot, but an occasional bottle (mostly GT Dave's, e.g., one of my beneficial fruit flavors with added chia seed).

As for the 'vinegar' question, kombucha typically contains less than one percent acetic acid, whereas apple cider vinegar contains about five percent. The higher percentage of acetic acid provides the vinegar-y taste. Also, kombucha contains gluconic acid, which vinegar does not (or vinegar contains very very minute amounts). Hopefully, this clarifies that kombucha is different than vinegar.

You're wonderful! Thank You! That clarifies a lot! And I only use green tea! So it should be okay! I think my skin issues are a probiotic deficiency along with nutrient deficiencies. My body feels clean, it's just not perfect yet, but soooo muh better! And now that I can make cocoa rice flour blueberry pancakes for breakfast, life is so good! Cause even though Os aren't supposed to thrive off of grains we still need them! And I love rice!

Glad to be able to help, and I do hope you're merely using the word "perfect" in a figurative manner, not literally. Only because, while it's admirable to strive to use our potentials to the highest levels possible, it's also important to accept that there really is no such thing as perfection. Every time you think you're just about there, the goal line will change. Even having the goal of perfection can cause a lot of unnecessary life-long frustration, while accepting that you'll do some things better than others but will always put forth your best effort in life is rewarding.

P.S. Sorry, for some reason I had it in my mind that you're in London. Don't know why, but just noticed my mistake. Thus, completely ignore my comments re: Whole Foods Market in London. (whistle)

Does anyone know if it´s possible to make kombucha with green tea? the recipes i have  also use sugar..is this ok for an O Gatherer (book)?  I don´t drink black tea as the caffeine in coffee and tea gave me severe palpatations many years ago..although there was major stress involved at the time too...

I make it with various teas, but green tea is my favourite, it is refined and somewhat like champagne!  :)

My daughter made Kombucha for several years with green tea and whatever sweetener was compliant for the food list she was currently following.  Last I observed, it was maple sugar.

I'm still waiting for my results.  I sent my sample in quite a while ago, so hopefully I'll learn something soon.

Btw, thanks everyone for the advice about kombucha and the tip to make it with green tea.

Yes C-Sharp i know that green tea has caffeine...it never seemed to bother me though, i drink 2-3 cups a day...perhaps if i drank more than that it would have a negative effect! Perhaps i have some Explorer as i cannot touch coffee at all...although i still adore the aroma...

I don't know if the kombucha will turn out with the sweeteners that you mention. I use regular sugar and the sugar is used to feed the kombucha mushroom (SCOBY). The kombucha that Dr. D. used for comparison for compatibility in SWAMI would have been the type traditional kombucha made with sugar. The sugar is mostly all gone by the time the kombucha has cultured and then you let it culture some more after it is bottled. If you go ahead with your original plan, please do post your results. There is also a very lengthy thread that was quite active here last year regarding kombucha and cultured foods.  :)

I used to make it years ago.  But now I just buy it.  It's really just a treat for me as my wife hates the flavor.  

My Swami said it's a black dot.  So I just waited two months and I'm back to enjoying it.  :)

Hi rosa, I agree with Dianne with regard to the food (i.e., sugar) that the SCOBY needs in order to flourish. I had an interesting conversation with G.T. Dave shortly after he first started commercial production of his kombucha tea line (in the U.S.). He experimented with various sweeteners, both singly and in combination, thrashing a number of SCOBYs in the process, to reach the conclusion that pure sugar is the best food source. We discussed residual sugar levels and such in the resultant kombucha, as well, and I was somewhat surprised at just how little actual free sucrose remains. Is blackstrap molasses one of your compliant sweeteners? I've successfully made kombucha before with green and white teas using mostly organic blackstrap molasses and a bit of organic jaggery.

No, I was not aware of that.  I seem to remember when I got the kit in the mail it said that you could select the option to get your results by mail or online, and I selected "by mail".  
Do I still need to go through that site?  
If so, what do I put for "North American Pharmacal Code Number"?

You can't use stevia to feed the good  germs in kombucha making. You can use it to sweeten the final product after brewing, if you like, but it doesn't have enough carbohydrates to feed the germs that make the kombucha into kombucha. Agave or molasses should work ,although I'd think most of the sugar is eaten by the germies and nothing's really left in the final product.

tolondontoparis- if you don't have your own kitchen, you may need to make a few compromises with your diet. Even if you do have a kitchen, you may want to use commercially available kombucha so you get some probiotics into your body while your homemade stuff is brewing. Kombucha is likely to be a much healthier choice for an O than kefir would be, even though a product made from black tea is an imperfect choice. If you do go with kefir, the kind brewed from goat milk is a better choice than the kind made with cow's milk.

Certainly, if you can find the space to brew your own, make it with green tea and you don't have to worry about it being compliant. Brewing your own is a lot cheaper in the long run.

Kombucha Adventures.

I've made kombucha with oolong tea and sugar, green tea and agave, black tea and molasses, and every combination in between...I prefer the oolong/sugar combination the best.

Hi Ribbit, I think if one's body is already in a pretty decent state of homeostasis, any overt beneficial physiological manifestations of something ingested become more and more subtle (e.g., if a person is fluid deprived, increasing water and other healthy liquids will show a more marked improvement; whereas, if one is already in optimal fluid balance, additional liquid won't necessarily be of benefit ... and could actually be a negative). I liken the situation to a worker that does such a bang-up job, it ends up being more noticed by its absence than anything else. On the other hand, I'm not as well versed in how a type A responds to kombucha.

I'm assuming the ginger, and lemon are added after the tea is bottled. Not contaminating your scoby. You can also interfere with the good bacteria by introducing a different enzyme to the scoby. You might have a nice drink but have added a different enzyme that could give you conflicting probiotics.  If you add this to your bottle you'll get a little of everything ,tasty and fun, but you could destroy your scoby if you add it directly, as far as it's health.  This is one reason I wouldn't feed my scoby honey.  The little bugs eat the sugar. Like wine most or even all has been turned.  As Ruth says you can add any sweetener, or flavoring to the bottles.
