For me, Indian food has been the lifelong hands-down favorite. And that made a lot of sense to me when I picked up Eat Right 4 Your Type fifteen years ago and connected the B dots. But - in spite of all the cooking in my biography, including professional - I had surprisingly not really taught myself to cook Indian. It was the cuisine I went out for.

Then, three years ago, I taught myself Indian cuisine from books and discovered how different it can be at home. All the good stuff and none of the bad. The main improvements for me were:

- not greasy, overloaded with ghee/oils
- vegetables not overcooked
- spicing more nuanced and deliberate

Are there any others on the board who have cooked Indian-style?

I love Indian food that I've had in restaurants.  I think I've only had a few of the most common dishes - biryani, vindaloo (hot!), etc.  There seem to be a lot of regional styles, though.  I wouldn't mind taking a cooking class to learn how to make some easy dishes.  It seems so complicated when there are so many ingredients that you are unfamiliar with, however, not to mention various regional styles.  I used to like this place in Long Island, close to where we lived before, called Dosa Diner.  The dosas were fantastic.  I think I like Mumbai Indian street food best.  :)

Me too san j, I am making a paneer and sweet potato curry right now for breakfast and lunch, and I was thinking along the lines of your post.  :D

I love the color of turmeric. I love the scent of roasting cumin seeds and almonds. And loads of basmatti rice to soak it all up.

I am adding in some dried cranberries too...fusion eh?

I don't think I've ever had authentic Indian food- between BTD and keeping kosher, it's hard to find restaurants where I can try out new foods.

I'd love some recipes though!

You'd have a ball with it, ruthiegirl.
You'd certainly be making your own paneer, which is soooo delicious (can you be compliant with it?)

Paneer is neutral for me. I've made it before, but I usually make quark because it's a bennie.

My son's friend had us over for Indian food a few years ago, she's from India and the food was fantastic but still a bit too fatty for me. Gee, you are giving me the idea to call her up and get some recipes.

During the Christmas holidays a friend had us over for Indian food, the first time she and her husband ever made it. A client from France gave her the recipes. It was delicious and it had coconut milk which I now substitute with almond milk.

Something I want to explore more of. Thanks for starting this thread. And yes, I love fusion approach to our BTD/GTD foods! ;D

Coconut meat and milk are avoids for me.   :-/  I reeeeeally miss that, too.

I miss coconut too. Honestly, I think it's the only food I really miss.

It's very easy to avoid Coconut in Indian cuisine. It plays a minor role, overall, except in the South. Most Indian restaurants in the US are North Indian / Punjabi.

I enjoy Indian food very much although must turn down the heat! It's pretty firey when prepared authentically. I cook often with Indian spices and have followed recipes with success.

We have Indian neighbors and the food is always good when they entertain but they do use a lot of packaged seasonings. I was asking her for some recipes and she brought me to her pantry to show me these packets of stuff they add to a lot of the food.

The recipes I follow are whole foods with Indian spices. I love the flavors.
