Someone described eating a really good sounding biscotti recipe today. I began to wonder how I could adapt it to my Hunter needs. I found some gluten free recipes that called for gums that I don't want to use.
Are there substitutes for the gums, xanthan gum, etc.?
Here is the recipe that sounded good, albeit given in Australian terminology.

try linseed or chia......once soaked, these act as gums

I was wondering if ground flax would work. Pre-soaked, I would guess?
