Here is a link to a dip made from canned salmon

The only thing I'd have to be careful about is that there are usually a few avoids in the adobe sauce and picking what kind of cracker/chip thing to serve it with. It's still loads better than anything commercialy available.

In all honesty, gcg, I'm not a chipotle fan, myself. There's something about the way smoking changes the character of a jalapeno that just doesn't do it for me.

I like smoked bacon. I like smoked Alaska salmon. I like some smoky bbq on certain meats -- it's just that chipotle flavor -- especially when combined with salmon (let alone canned salmon)? It's not ringing my chimes.  :-/

I'd go with another kind of sauce, rather than adobo, entirely, unless, as you say, you know what's in it.

Oh I like the taste of adobo but it does have soybean oil as the eighth ingredient and an unidentified vinegar as the second. Negligible amount of avoids in my estimation.
