Maybe many of you have seen this before, but I just spent some minutes researching recipes by ingredient and by country.
It's a vegan site.
If you want to know how to turn an eggplant into an Indian dish, for instance, or if you want to prepare cauliflower Iranian-style or North African courgettes or ...

In my case, I wanted to see Bengan Bharta (mashed eggplant, Indian style) recipes that were tomato-free. BTW I found a Pakistani recipe that calls for tomato OR tamarind -- and contains jalapenos! Here's that:
