I can't have those ingredients.. but it turns me on to other things.. making veggies into bottoms can be done with sweet potate also..I THINK at least it could be done... what a great idea... thanks.. ideas always expand my horizon...

I made a version of your recipe Kathleen using parsnips I had on hand and whipped up a quick fig n prune chutney to top it with ; also ate it with fresh basil, roasted red pepper and parmesan. SO satisfying, wishing for more time to indulge  :D Oh and I used the whole egg...

honeybee, next time I'm at the store I will pick up some parsnips and try it out! Your toppings sound deeelish  ;D
