I've been filling out my SWAMI form and I'm not sure how to answer about Dairy intolerance.

It's a timed question so I don't think it can be changed later.

I don't drink milk bc I have immediate congestion. I do eat some cheese. But I don't know if that I really what they mean by intolerance. I don't get terrible intestinal cramps like some do.

Hi purlgirl, I said no to dairy intolerance even though I get a drippy nose when I eat yoghurt, and it's meant to be a superfood. Maybe I should have ticked yes. How did the rest of the swami come out? R u happy with it?

Interesting question.  Some people cannot drink milk because of reactions to it, yet they can eat cheese and perhaps yogurt with no problems.

I checked off lactose intolerance but I'm really casein intolerant. And that's the protein found in
dairy.  Casein shows up as a SWAMI toxin for me, yet all cheese contains casein...It's confusing to say the least...There is no specific SWAMI question that asks if you're dairy intolerant..so although lactose isn't really something I think bothers me, cow's milk cheeses bother me more than sheep's/goat's milk cheeses.

So even while checking off lactose intolerance....I got lots of cheeses on my SWAMI...

But low overgrowth cheeses are supposed to heal the gut.

Dairy foods totally confuse me.  I go back and forth between eating cheese and avoiding it.

How could I be a Teacher if I don't tolerate cheese?  Cheese is such a large part of the Teacher's
diet.

Edited to add that my SWAMI says this about cheese and dairy:

"These dairy choices are designed to correct digestive imbalance by restricting the carbohydrates available to intestinal bacteria and yeast. Only the carbohydrates that are well absorbed are included, so that intestinal bacteria have nothing to feed on. This helps to correct the bacterial overgrowth and the related mucus and toxin production."

Maybe I'm not eating enough cheese and still need to correct digestive imbalance.

Sorry I haven't been around - very busy weekend  

I come out Teacher,  50%

Need to study this - I can see quite a bid of changes from the reg GTD3 food list. Esp in Dairy and Fruit.  
Wheat is gone except for Spelt & Kamut.  Sprouted Wheat is neutral. Corn & Rye are also out.

Gona have lots of questions I think.

I put down that I was not Dairy Intolerant - will see how it goes.

Drippy from the nose? It can be the beneficial bacterias acting together with the immune system.

For anyone here, try A2(from animals from caprinae subfamily in general like sheep or goat) milk products and see if something changes. Even if nothing changes I'd suggest the A2s.

I found a sheep's milk gouda made in  Holland and I don't think it's going to make me stuffy.  Tried it yesterday...so far so good.  I think it's possible that it's cow's milk that's been my problem.

Will make an effort to eliminate all dairy from cows and see if I can make cheese work better for me :)

It's scientifically explained that A1 type milk and it's products alter the working of central nervous system and add greatly to many bad diseases. Though it's not proven that it's the only reason that cause much worse health in regions where people breed A1 type cattle than in regions where people breed A2 type animals.
I don't eat meat of the A1 type animals also and I believe that they are much worse than A2 type animals' meat. Actually the cause of the bad health in A1 milk is in the meat also in different forms, for example the meat has the different morphine-peptides also. It's just not could have been explained scientifically that A1 animals' meat is worse than A2 animals' meat yet though this is the case.
Changing to A2 type animals in both milk and meat will cause better health for sure.

Casein is a forever Avoid for me too.  

Dairy
SWAMI gave me:  6 Diamond, 4 Beneficials, 4 Neutrals Cheeses plus Ghee and Yogurt.
5 servings a week  --- I'm a Happy Camper   :D

I am  so excited about this approach (starving the bad bacteria). If I can eat these dairy products without getting sinus infections  - I'll be thrilled.  
If I can't - I'll give up Dairy completely.  It's worth a try.  :)  I'm happy for this chance.

Healing my intestines is a big conscern to me. Lots of cancer in my family and I have 6 whorl fingerprints.

Onur - how do you know if the dairy product is from an  A1 or A2  cow?

I found Raw milk to buy here locally (north Cal). Going to use it to make my yogurt.

I asked the office to change my lactose input to intolerant and the only thing that changed is:
yoghurt and whey protein not allowed anymore. I'm going to miss my yoghurt but I'm glad I can still have mozzarella, ricotta, feta, parmesan and cottage cheese, so not all bad.

But:

For portion it says: milk 4 ounces, cheese 1-3 oz and butter/ghee: 1/2 teaspoon
Frequency: 4 times a week.

Does that mean that I can have the milk  + cheese + butter each 4 times a week?

for me Cow and goat milk are Toxins (forever Avoids)
but  "Milk, Indian Buffalo " is a temp avoid (black dot)

You can have 4 servings total....  You pick which item of food you want
to eat from the list, but it's still just going to be 4 servings total.

I think if I didn't list "lactose intolerant" I might have gotten yogurt and whey protein to
eat but SWAMI lists them as toxins.

....but there was no place to list casein intolerance (even though SWAMI listed the word casein
as a SWAMI toxin).  I don't even know if I'm lactose intolerant.  If I get a stuffy nose from cow's
milk cheese, that doesn't really imply lactose intolerance.  How would anyone know if they're
lactose intolerant?  Doesn't all dairy contain lactose?  Doesn't it all contain casein?

Chloe, I just thought I'd change it to intolerant because of runny nose after eating yoghurt.

Purlgirl, you were correct and I was eating way too much

But: Swami says 4 oz of milk, but then underneath that it has ALL milks are avoids!

I get that too Lizzie, except that water buffalo milk is neutral. I haven't the foggiest idea where I can even get water buffalo milk, or if there are even any water buffalo on this continent! I even had to research water buffalos to see if they're even kosher!  They are, which means I can drink this milk if I'm ever able to locate it.

In the meantime, I'm enjoying small amounts of the allowable cheeses. I need to think of them as condiments, not protein sources.

Lizzie- quark cheese is very similar in taste and texture to yogurt. If you're allowed that, you might want to give it a try. It's also super-easy to make (I made some when trying to make  farmer's cheese.)

Ruthie,
Water buffalo milk is what's in the "white ball" mozzarella.  Whole Foods used to have this unbelievably delicious water buffalo yogurt but the company that made it went out of business.  They were in Vermont.....it was SO good....The proteins in it are evidently smaller and therefore more digestible.  
I buy goat's milk yogurt and have it very very occasionally if I'm in a pinch for a quick meal.

All the cheeses I have to work with are aged but when I get the temp avoids back  I want to try making cheese.

For future reference - Is there a list of Cheeses  that one could reasonably make at home?  I make my own Yogurt - it is so much better. No junk added.  Easy to make.
I found Raw milk at a store here - I'm making my first batch with it today.

Do any of you get buttermilk?  It's a neutral for me.  Is it from cow's milk exclusively?  Is it
something I could make from sheep's milk, maybe?  Sheep's milk isn't listed on my SWAMI
at all. I would think it's neutral but I'm trying to avoid all cow's milk/products if I can.

Purlgirl,

Lactose is just the sugar in milk/cheese.  Most likely, the drippy nose and gunky throat is caused by the milk protein.  If you're lactose intolerant, drinking milk will most likely give you gas and "stomach" cramps.  That's because your body isn't digesting the lactose, so your gut flora are eating it and producing gas as a waste product.

TJ - thankx for your thoughts.  I don't get that reaction (cramps and gas) so I think I did good chosing "not lactose intolerant".  
My body is much more likely to just stop working. (not a good thing)

Not quite, Lola.  Galactose is one of the monosaccharides that make up lactose.  Lactose is indeed the sugar found in milk.

Ruthie: I used to eat quark when I was still in UK. Bit more difficult to get over here. But quark and farmer's cheese are both neutrals and I want to stick to the superfoods and diamonds otherwise it becomes a slippery slope ...

   My Fruits, Live Foods, and Fish list are so huge I may drop back to all Diamonds on these for a while.
   Esp Fish since I have no idea what most of them are.

   I have noticed that some of my Geno Harmonic Foods are Neutrals - so I'll inc them in my list.

Gotta get real too - I can spend so much time getting organized that there is no time or energy for practical application.  :P

Here's my question. I'm thinking about making my own cheese sometime in the future. I suspect I'm allergic to dairy, not the life threatening kind, but the kind where the reaction is delayed to the next day. My nose gets blocked up during my sleep, I get mucous in my throat, one of my ears starts hurting, and I wake up with huge dark circles under my eyes. I have not been tested, these are just my observations.  Anyway, I love cheese and I could live without it if my swami didn't give me any but it gives me a few, depending on my secreter status they vary. I like to have macaroni and cheese occasionally and have been buying daiya imitation cheese every once in awhile. It has avoids, doesn't really have nutritional value, and is expensive so I'd like to stay away from it. What do you all think about making my own cheese? Do you think I should or shouldn't do it considering my situation? I'm also wondering if rice or nut milk can be made into cheese. Maybe I could try that too. I'd be happy to get a little bit of cheese once a month if I could. I'm going to try ghee made at home again first and try the cheese after I get better food back in my routine.

One more thought, I have lactose intollerant checked on my swami but back when I did drink milk I never really got a stomach ache from it. Of course this was a long time ago. I gladly haven't drank milk for a year. I do recall possibly being gassy from it but I wasn't sure. Maybe I shouldn't have it checked on swami?

I looked at my lists and Romanian urda is neutral for me regardless of secreter type. I'm off to look for recipes. I heard it might be called Gjetost in america is that right? I have no idea how to pronounce that. Could I buy the things I need to make cheese with from the local store? I've never seen it.

If you're looking for something to make a cheesy flavor in "macaroni and cheese" you may do better with nutritional yeast than actual dairy cheese, if nutritional yeast is OK for you. You can make the sauce from nut milk or compliant bone broth, thicken it with a compliant flour or starch (such as rice flour or arrowroot) and then add spices and nutritional yeast. Yeast doesn't have the same texture as cheese, but it does have a "cheesy" aftertaste that's perfect in sauces, and may work even better than a soft cheese. I'm assuming that cheddar cheese is an "avoid" for you.

I'd suggest doing websearches for the cheeses you're allowed and the word "recipe" or "cheese making". See what's involved for making each type of cheese, and then you can decide if it's worth your trouble to make it. Soft cheeses are very easy to make, but hard cheeses require more materials and time.

I made my own quark and paneer fora while, but stopped because I have a very hard time with portion control on homemade cheeses. I was simply eating too much dairy and it negatively affected my health.

I had same issue with lactose intolerance.   Wasnt sure what to say.  I am coeliac and it was recommended to go dairy free.  I notice indigestion with some cheeses and haven't touched milk for a fee years.  I am usually ok with icecream so I am confussed what to put in Swami.

I'm similar....have issues with gluten but my problem with dairy is casein (the protein in cheese
and dairy) not lactose.  And people who are gluten intolerant are often casein intolerant as well.
We can't break down the protein....  I'm fine with yogurt, and a few beneficial cheeses.  The long list of compliant cheese in the GTD book, most give me a headache and stuffy nose.  I'm fine on manchego cheese, parmesan, yogurt, ghee.  Most other dairy feels wrong.

My granddaughter IS lactose intolerant.  All dairy gives her a rumbling stomach. bloating and diarrhea.
You'd have to have real lactose intolerance symptoms to be checking off that box.

1) You will notice that checking lactose intolerance does not eliminate all dairy from a person's SWAMI.

2) Unchecking the box may or may not change a SWAMI diet recommendation for dairy. If you have other things in your SWAMI profile that indicate that you would not handle dairy well, you will still only get a small amount diary.

You may want to run SWAMI with the box checked and unchecked and compare the food lists.

I don't drink milk, but I need to try it again. I have it in eggs sometimes and it's no big deal to me.  And I don't ever remember acting strange with milk.  Butter is good to go also.

However, cheese stops me up right quick and cultured dairy makes me feel awful and gives my stomach fits.  So.......  I marked that I'm intolerant.  

It's not an easy thing to answer.  I don't even know what I am.  I think mine is more of a reaction because of lyme than anything.  I used to love dairy though.  Love love love.  Cheeeeeese.
