What I would do without Carol (Harmonykitty) I know not.  She told me on the phone the other day that she just went to my HFS, so natch I made her tell me everything that she bought (we are such BTD/GTDers *lol*).  ANYWAY, this is the cool thing:  sometimes you can go somewhere, like, EVERY DAY, yet miss things because you are so familiar with the place and everything in it (or so you think), that your eye overlooks something CRUCIAL!  Trust Carol to notice something that apparently was right in front of my face every time I bought my Sami's millet & flax bread, yet did I see it?  Heck no.  In my defense, I think part of the reason is that I'm so trained from years of O nonning to AVERT MY EYES FROM THE BREAD DISPLAY *lol*, that I just would do my surgical strike for the millet & flax bread and not even look at all the other things on the shelf.  Well!

It seems that the compliant pizza crust I've been yearning for forever is REALIZED:

Ingredients--and this is both G2 and O Non compliant, but I chose to post it here in Nonnie Central because I think finding compliant and convenient grain items like this really ROCKS an O non's world far more than it rocks a G2's world, as O nons are very restricted on grains and G2's have a tad more latitude in terms of servings per day, anyway.  But both types plus a bunch more types will appreciate a compliant, convenient, premade pizza crust.  You can do SO much with a pizza crust!  A compliant pizza crust is earth-shattering nonnie news!  Anyway, on with the ingredients:

Organic Millet Flour, Brown Rice Flour, Water, Aluminum Free Baking Powder, Sea Salt, Organic Grounded Flax Seed

YEAH, baby!  That's what I'm talking about!!!

Thanks, Carol!  (She also found some sinfully fab-sounding and nearly-compliant Sami's cookies, same shelf, but luckily those turned out to be WAY too expensive for my blood, no pun intended.)

No gluten, no dairy, no eggs...how DO they do that?  Making any similar sort of bread is impossible in my kitchen!

Wait! I thought brown rice flour was a dot for us!! But if it's a small amount, I may 'cheat,' rather have a temporary lapse! Ha!
I wasn't a big bread eater most of my life, but I am craving sandwiches more. Maybe some non-cheese hamburger pizza with this crust might add some variety!!

Hey, a dot means proceed with caution, not necessarily run far and run fast!   ;D  It means, hey you G2, don't think you can eat pizza every day...but now and then, with this one-dot crust?  Sure, have a slice or three!

It's the flax that does it.  I'm convinced.  When I first tried this brand of bread a couple of months ago I was like, "They've got to be lying.  There's no way to make stretchy, soft, squshy, fluffy bread out of millet and rice."  But I recently discovered golden flax and that's their secret, I'm sure of it.  I'm currently working on a recipe to try to duplicate it.

Neither of the Atlanta Whole Foods stores carries it.   :'(  But as soon as I get a recipe worked out I'll post it.

Well, given that it's not avail in Oz, I'm thinking of trying it with Millet and Quinoa flour.  I'll have to wait for a few weeks, but I'll let you know as soon as I have a go.

Alright, I doubled the flax meal to 4 Tbsp. instead of two and they were a little better.  This time I used millet flour instead of rice flour.  They were tasty but could have used a little more agave.

That pizza recipe sounds really good.  Just be careful of the Aluminum Free Baking Powder...it could contain corn...sorry. :(

I have alos tried making the cardamom muffins, I am still amazed that I am able to eat them :D

I used a recipie from the BTD recipe database http://www.dadamo.com/typebase4/recipedepictor7x.cgi?909
However I modified it a bit, and I doubled the batch to make larger muffins:

2 cup flax meal
1/2 cup rice/arrowroot mix (or other)
1/2 tsp baking soda
1 tsp salt
6 eggs
a squeze of fresh lemon juice
1/2 cup olive oil
2/3 vegetabel glycerine
Cardamom to taste

My first batch I used teff grain insted of rice, and I think they tasted better.

  I tried the pizza crust also, which tasted fine, but I think I need to work on it a bit so the bottom part isn't so mushy.
