Anybody know where I can find 100% artichoke pasta? I have looked at four different places locally and online and can only find a brand called DeBoles in Jerusalem Artichoke pasta (not what I want) or the 100% Artichoke in a minimum case of 10 lbs. (a bit too much for just two people who have never even tried it yet).

I have looked and looked all over google and can not find plain 100% artichoke pasta either!! Does it really exist?

If you gals have a Whole Foods near by, you can see if they can get it (check ingredients w/ them first even if THEY say it's only artichoke  ;)).  If they can, they may say you have to buy a case or a certain amount for them to order it. However, and here's the good part, if you don't like it, you can take it ALL back for a refund, just keep your receipt. Even if you DO like it, you can still take back what you won't use right away, again, keep your receipt. Also, if you buy a case or the 'determined' amount, you get a 5% discount.  ;D  And while you're buying pasta...  ;D ... for those of you that can have it, they have a to-die-for spaghetti sauce - mushroom and eggplant. I forget the brand name, sorry.  :B

I've been internet hunting for this and have come up with nada.  Everything I've seen including DeBoles and Eden has wheat.

Apparently it does exist because it was tested.  Maybe Dr. D can give us a clue as to where we can find it?  ??)

Thanks Italy!  Glad to know it actually does exist but with shipping it would be around $11.00 per box.  Yikes!  I may see if I can locate some artichoke flour and possibly make some from scratch.

I'll ask my HFS about both the pasta and the flour and see what they say.

The one you found sure sounds good though.  :K)

Thanks Lola!  Such wonderful help this morning.  That's a price buster as well, isn't it?  I'm definitely going to talk to my HFS.

No, I do not think the Jerusalem Artichoke is what is meant.

For GTD - Teacher, pg. 228, it says 100% Artichoke Pasta in the Carbs. section at the top as a Superfood with a diamond. At the bottom of the page, in the Live Foods section it mentions Artichokes as Superfoods (no diamond) and on the opposite page (229) it mentions Jerusalem Artichoke as an Avoid (no black dot).

Good eye, Chanur!  Yup, Jerusalem artichokes have gone from superbeneficial for Asec to avoid.  Regular artichokes...still superfoods. :)

Sadly, that lovely looking artichoke pasta has cayenne pepper in it. :(  Avoid for me.  Although it sounds delicious.  I'll have to check around here and see if there is any 100% artichoke pasta.  You never know! :)

I did find this source for a decent price for artichoke flour.  Now, whether it is Jerusalem or Globe is still unknown.  I have an email to them as to which it is.  I'll let you know their answer.

It seems they have quite a nice selection of flours.  One place I looked at wanted $36.95 for a pound of artichoke flour. :o

It looks like you can also purchase it under the option of any 6 smaller boxes of pasta.  The artichoke pasta is on that list as well.

I called Brownville Mills yesterday and was told the flour is 100% Jerusalem which is a no-go for us Teachers.  :'(

I was soooo hoping it was usable.  The search continues .....

I called Barry's Farm. Theirs is the Jerusalem type also.  :(

I know I've seen it before at WF's, but that was a long time ago in a galaxy far, far, away...

And the search goes on...it's gotta be out there somewhere. Dr. D. tested it.

Artichoke Flour is from Girasole not the Globe Artichoke...
You could flavour pasta with ground Artichoke pulp.

THerefore until in contact and/or see the package: the Rossi Pasta webpage must be inaccurate...

But then again with a masticating juicer, pasta machine, and a garden plot you could make your own Artichoke pasta as there is a bit of root mass and the pith of the stem...Cardoon would work as well.

For those looking for Artichoke Flour, try searching for Artichoke Powder instead. Amazon.com is a good source.

This is all very confusing, my swami says artichoke flour pasta is a diamond, Jerusalem artichokes are neutral and artichokes are diamond. I don't think there is such a thing as flour made from any other kind of artichoke than the [i]Helianthus tuberosus[/i, AKA Jerusalem artichoke, AKA Sun choke, AKA girasole.

Really wish Dr. D would chime in here and clear this up!

Hi grey rabbit, there is an artichoke pasta made with globe artichokes (Cynara cardunculus var. scolymus). I think that's what the earlier posters were referring to; i.e., the ones that were specifically not talking about pasta/flour made from Jerusalem artichoke ... if this clears it up any.

Like everyone else, my search for 100% artichoke pasta came up empty and the TYPEbase was no help.  Both artichokes and jerusalem artichokes are diamonds for me so either type would be OK, if I could find it.

I was able to find globe artichoke powder (http://www.sharpweblabs.com/shop/artichoke-leaf-powder-natural-organic-grown-p-2301.html)  but I doubt it has enough starch to be made into pasta and at $18/pound it's quite expensive.  

If you're looking for gluten-free pasta that tastes good, http://www.livingtreecommunity.com/store2/products.asp?catid=21 offers one made from organic quinoa and white rice which is so close to 'regular' that I was able to fool my husband with it.  He prefers it to the brown rice versions.  I checked with LTC and it is 100% quinoa and white rice.

If you're interested in making your own artichoke pasta I would mix the powder with either quinoa or rice flour, or both.  

The jerusalem artichoke flour available here: http://www.baar.com/Merchant2/merchant.mvc?Screen=PROD&Store_Code=001&Product_Code=5001 has directions on how to use it to make pasta.  At $43/pound, you would have to mix it with some other flour!

I no longer eat grains so none of this is an option for me but it might help someone else.  Making your own pasta is not difficult and it tastes much better than store bought.
