Anyone have a good, simple vegitarian recipie they could suggest?  We're having a friend come over for dinner tomorrow night and he's a vegitarian - I have no idea what BT he is although I would guess type A since he talks about how meat gives him digestive problems and that's why he's stopped eating it.  So, I'm looking for something neutral that would work for a possible A, an O and a B?  Any suggestions would be great.

How about a nice rice pilaf and plenty of fresh vegetables? You could have steamed or sauteed zucchini or yellow squash (or both!) with onions and peppers, and a garden salad as well. Dessert could be fresh fruit salad with goat cheese on the side, or perhaps some Italian ices or granitas. To up the protein content for Os and Bs, you could offer toasted walnuts to add to the pilaf or salad. Chopped hard-boiled eggs could also be set up on the side to add to the salad. Easy Rice Pilaf (from America's Test Kitchen Cookbook)

(Basmati, jasmine or Texmati rice can be substituted for the long-grain rice. Imo basmati is much tastier and far more fragrant than plain white rice. Olive oil can also stand in for the butter. This recipe can be doubled to serve a crowd; fortunately the cooking time remains the same.)

1 tablespoon unsalted butter or olive oil
1/2 onion, minced (about 1/2 cup)
sea salt to taste (opt)
1 1/2 cups long-grain white rice, rinsed and drained*
2 1/4 cups cold water
pepper to taste (opt)

*Before cooking, rinse the rice under cold water until the water runs clear, then drain.

Melt the butter in a large saucepan over medium heat. Add the onion and 1 teaspoon salt and cook until softened, about 5 minutes. Stire in the drained rice. Sautee until the edges of the rice begin to turn translucent, about 3 minutes.

Stire in the water and bring to a boil. Cover and reduce the heat to low. Cook until the rice is tender and the liquid is absorbed, about 17 minutes.

Transfer the pot to a cold burner or trivet and let the rice stand for 10 minutes. Fluff the rice with a fork. Season with salt and pepper to taste. Serves 4.

(You can add chopped steamed broccoli, chopped cooked greens, cooked carrot cubes, fresh peas . . . all sorts of vegetables taste great in pilaf! If you want to give it a nice kick add in some ground cumin and a little cayenne pepper.)

Those are great ideas - I know this guy doesn't mind if we eat meat so I'll probably just have some meat on the side for me and Kris too.  Any other ideas?  This guy will probably be coming to our house about every other week to give Kris drum lessons so I'll be needing other ideas for the future as well.

Stuffed baked butternut squash, vegetable chili or soup when the weather gets cooler, vegetarian pizza with a spelt crust and soy cheese if he doesn't do dairy, vegetable stir-fry . . . that's what I can think of off the top of my head.

Missy, if you are planning on making some meat for yourself and Kris, then perhaps (if you can find it) some Nutrition Kitchen soybean pasta would be in order for your guest. What's nice about it is its very high in both protein and fiber, and you can dress it with whatever you would normally put on pasta. I can find it in my local HFS.

If you're not able to find the brand Drea mentioned (which sounds pretty good, hope you get to try it), you could get Tinkyada rice pasta. They make spaghetti, linguine, and colored rotini. It's the pasta of choice in our house, we love it! There's also VitaSpelt and Ezekiel pasta, both excellent alternatives to whole wheat pasta.

Currently our favorite spaghetti sauce is two cans of diced tomatoes, some merlot or burgundy, onions, garlic and mushrooms sauteed in lots of olive oil, and herbs: rosemary, basil and oregano mix, ratio 1:1:1. A little pinch of red pepper flakes gives the sauce a nice mild kick. You could serve turkey sausage or beef meatballs on the side for the carnivores, and a big fresh romaine salad with olive oil dressing, and grated pecorino.

Just remember that A's can't have tomatoes if they are secretors...but then again, B secretors can't either.

These ideas may not work for your blood type, if you're looking for btd specific meals, but they are both delicious.  They come from health food store menus in my area.  Even my parents liked them, when I used to serve it to them.

#1---A flour tortilla wrapped around adzuki bean chili and melted cheese (farmer's cheese is used, I believe), then topped with chopped romaine lettuce, chopped tomatoes, salsa and guacamole

#2---Half of a pita bread stuffed with cheese (melted) and black beans, then filled with a little sweet pickle relish, grated carrots, and alfalfa sprouts

I know that walnuts are at least safe for all blood types.  Almonds are, too.

If you want to serve up a spaghetti sauce that's okay for all, look up Jillthepilllady's No-Tomato Tomato Sauce. It's listed in Typebase under the 'beets' category. I HATE beets, and still really like this sauce! It's delicious, and okay for anyone for whom tomatoes are an avoid--either because of blood type or health concerns.
