Anyone have any tips for drying fruit? There is a huge bounty of beneficial fruits available now and I'd like to preserve some for the rest of the year.

Many of the commercial & 'natural' fruits are dried/preserved with sunflower oil. I'm sure this makes them more appealing and pliable but this is an avoid. Canola or olive oil are acceptable substitutes.

What I'm looking for is techniques and experiences with drying and preserving fruits. Thanks for reading this -  and please share (good or bad)! :D Thanks!

I like to dry mine in the form of leather.......

I grind the fruit into a thick pure, and spread it out evenly on a dehydrator lined tray.....

Lola, do you use nonstick dry sheets, silicone dry sheets or disposable parchment paper?

I have been doing lots of freezing of my fruits and will be doing some blanching of the vegis soon. I do love the leather though! I also have been drying my blueberries whole, some of them are crunchy dry and others are like blueberry raisins.

I line my trays with seran wrap......
when done, I cut the leather with the wrap in strips and roll.......
it works for me that way..

Interesting, I did not think that seran wrap would withstand the heat...what type of dehydrator do you use?

there s no heat per se in is very low....

If you live in a not so humid environment you can also use a Solar Dehydrator this time of year.
You'll want to do the Counterflow/Downdraft style if you build your own....

As a teenager I dried apples over the heat vent.....

I'd better get on the horn and dry those cherries this week! :D

Schluggell - have you ever lived in Washington? (I could be mistaken, but I thought you had :) )

I have an electric gentle fan powered dehyrator. Got it at a thrift store brand new for 10 bucks.

I've made great banana chips, coconut, and parsley with it so far.

Washington gets amazing Bing cherries from eastern washington state - Yakima area. They are really expensive out of season. I love dried cherries, so I'm off to experiment!
