Has anyone any ideas for a marinade for white fish and chicken before cooking on a griller (like a Bar- b - q)
I cant get hold of cherry joiuce although I suppose I could put some cherries in the food processor. All ideas appreciated

Hmm - Never 'marinated' White Fish. Sometimes they are prepared with a sauce.
But they are baked or poached {wrapped in foil/greased Parchment with the sauce & grilled or steamed). The sauce would be a White or Bechamel with whatever seasonings you may want. It sounds funny but is good is lay some onion slices on the fillet, slather on the sauce and shake some Tamari & Sake on it.

Fresh White Fish shouldn't really need a marinade - as above a little basting at grilling time. Butter, Dill Lemon slices, and maybe some slivers of Ginger.

A variant on marinading for White Fish is to let it marinade in Lemon/Lime Juice for several hours to "cook", stir in chopped veggies - The Mexican Ceviche.

I agree with S - white fish - shouldn´t really need anything
- I was thinking about chicken or turkey....
Scallops on the other hand is nice in lemonjuice and herbs- just 10 minutes or so or they´ll cook

For chicken you can try extra virgin olive oil, lemon juice and rosemary, roast it, very very tasty. I don't marinate my fish either.

Because of the delicate flavor of white fleshed fish, perhaps grill it plain and finish it off with evoo, sea salt, fresh squeezed lemon or lime, or fresh herbs of choice.

I recently tried adding tamari sauce, garlic and ginger when pan frying cod: it was really tasty! The normally (to me) boring cod turned into an appetising meal. ;)

Great suggestion, Itita. I find cod to be very bland...unless it's deep fried and smothered in malt vinegar!

Absolutely!!!  That was the only way I used to eat it.  I guess we could still go for breaded cod, but home made (they tend to put a lot of rubbish in the ready made ones :(), pan fried or oven baked and then smothered in lemon instead of vinegar  ;)!
