I know it's beneficial for O's! I don't eat it as often as I should, but today I remembered to put a tsp. in my smoothie...it was good. It goes well with cherry juice for some reason and can stand a little stevia...my smoothie today: banana, cherry juice, soymilk (old ways die slowly...) flaxseed meal, carob, eggwhite protein pwdr, stevia......whalla!

jayney-O...sounds pretty good.  Soymilk is a neutral for O secretors so you should be okay unless you have issues with it.  ;)

I like to have it on my flax meal with bananas, and perhaps walnuts.

I have not had it for a while. Thanks for reminding me. I am going to add it to my post exercise smoothie.

You may want post the recipe in the Recipe Index.

You can always substitute a compliant nut milk, filtered water, ice cubes, or additional filtered down fruit juice to substitute for the soymilk.

I love carob! It's too bad it's been promoted just as a chocolate substitute, because carob has a lovely flavor all its own. It's great in smoothies, gives them a nice malty taste--yum! :) Also good just sprinkled on bananas or apples. I like carob chips in trail mix too.

Slice up a banana....

Melt some ghee just to melted in a small custard pyrex dish.  Blend with some almond butter.  Add in carob until it is "thick" but not dusty.  Add liquid sweetener as desired (agave, molasses, etc).

Put some carob spread on each banana slice - serve with toothpicks.

I have been experimenting with some more 'novel' applications (and have not posted in the cooking forum.) Some of these include:

Collard and salmon 'stew' with ginger, carob and clove (and all the usuals like onion and garlic)

Quinoa with sweet potato and carob (and cinamon, etc)

Fava-right carob dish (try with cardamon!)

and so on.... you get the idea......

Don't get 'stuck' thinking it's only dessert, or that you need to use a sweetener.

Its hard to beat the flavour of the Carob pods straight from the tree...the Carob Powder sold in stores just isn't the same.

I like the Mole suggestion - I'll have to try that soon!

I also make a spread with carob. I don't like to use almond butter thouggh because I find it's so lovely on it's own, it's a shame to mix it!

I use a plain nut butter like tahini (richh in calcium as well) and just mix in enough carob powder to make a spreadable, dippable paste. Better than Nutella!

I also do another tahini one, except instead of carob I use cocoa powder and a touch of aggave to even it out.  Mmmm...

Please where is the mole recipe? I searched under chicken mole, mole, carob. no luck.
Have a horribly complicated mole recipe off the net but would rather try the carob version, espec if already btd compliant! thanks.

The one I put on the cooking thread last summer is no longer available. Pretty much just using carob, spices, sweetener and some good fat, with a little water. I always cook 'by eye' rather than using a recipe so can't help you with amounts, etc. A couple round Tbl of carob goes a long way though!

inspired by the thought of Mole sauce.

This is what I used, you can modify to suit.....

1 tbls olive oil or ghee
2/3 cup spelt berries (presoak)
3 cups water
1 large onion, chopped
1-2 clove garlic, choped-sliced-or-minced
3 cups fresh Okra, sliced
small handful fresh parsley leaves
1 can tomato paste
1 'Tbl carob powder, or to taste
pinch Stevia or preffered sweetener (not much)
pinch sea salt
spices (I used cayenne, ginger, tumeric, fenugreek and oregano)

Sautee onion and garlic. Add spelt, water, spices and salt. Bring to boil, cover and simmer for 50-60 minutes. Add all other ingredients after 40 minutes.

tomato 'sauce' could be prepared ahead for deeper flavor, the contrast was quite good as it was.


I kept it as a souvenir!! ;)

Carob is one of the richest sources of plant sterols and sterolins, which is probably why is has a very good reputation for helping chronic fatigue..

What I've been doing lately that works very well is diced sweet potato as a thick stew with carob, ginger, fennel seed, clove and cinnamon. Optional cayenne, fenugreek, olive oil or ghee. Makes a great 'base' (could probably make a large batch, puree and freeze or refrigerate.)

Options include stew meats/poultry, firm veggies, quinoa, onions, beans/legumes. For a sweeter stew add chopped fig (dry).

Turns out to be pretty versatile as a main dish/side dish option rather than dessert.

My mother used carob a lot when we were growing up.  One of our favorite breakfasts was carob milk, made with fresh raw milk from the dairy down the road (not knowing then that half of us were allergic to it), carob powder, honey, vanilla, and a homegrown egg.  Delicious.  Now I make it for my children using safe alternatives, of course, and they love it too.  My mom had a carob fudge recipe once upon a time, but she can't remember now what was in it or where the recipe came from.  Does anybody have any ideas about how to go about making something like that?

Can you buy locust bean gum by itself?

Ribbit I found one that sounds like the one you described

Carob Fudge

1 c. pure maple syrup

1 T. carob powder, sifted

1/8 t. sea salt

2/3 c. soy milk

1/2 t. vanilla

1 T. soy margarine or butter

1/2 chopped nuts

Combine syrup, carob powder, salt and soy milk in a deep pan stirring until ingredients are blended. Cook over medium-high heat until soft ball stage (tiny drops of the mixture will form tadpole shapes when dropped into cold water.) Remove pan from heat, add vanilla and margarine, stir until mixture is smooth. While still warm, add nuts, stir, and pour mixture onto a well buttered plate. Cut into square before the mixture completely harden ( this one doesn't have the gums, so thats good news)
& I'm sure you can change the maple syrup for agave nectar, if desired to do so.

I seen carob and heard about carob in the past, but I didn't know it was so good for us. I think I will stop off at my bulk barn and pick some up today. The carob fudge sounds delightful thanks for posting it.  ;)

I put carob powder in my favorite muffins. Also, in my breakfast drink. I agree that it is very good for making the stomach feel "healthy." You really notice things like that after having a stomachache for decades. And, like others, I love Carob Extract simply drizzled over nuts! Delish!

Raw carob powder is likely the purest source and roasted carob chips (although I'm not sure of the specific product) might contain a lot of additives you might not find beneficial.

Here's a way to make carob chips using just carob powder and coconut oil, unsweetened for
this recipe, but you could add any compliant sweetener of your own choice.

I found this recipe in my files...I can't have coconut so I think I substituted ground nuts....haven't made it
in a long while..I think sesame seeds or sunflower seeds would be fine too.

1 cup peanut butter
1/3 cup honey
2 teaspoons carob powder or unsweetened organic cocoa powder
1/2 cup raisins
3/4 cup unsweetened shredded coconut, divided
1/2 cup semisweet chocolate chips (gluten-free, if desired)
1/4 cup sesame seeds
1/4 cup finely chopped nuts (walnuts, pecans, etc.)

Method:
Mix peanut butter, honey and carob or cocoa powder until well combined. Stir in the raisins and 2 tablespoons of the coconut. Stir in chocolate chips. Refrigerate for 1 to 2 hours.

Place remaining coconut, sesame seeds and nuts into 3 separate bowls. Using a spoon, scoop small heaps of the peanut mixture from the bowl; roll into 1 1/4-inch balls. Rolling is easier if you form a rough ball, roll in coconut, and then continue rolling into a more perfect shape. Roll each finished ball in more coconut, sesame seeds and chopped nuts. Arrange the balls on a plate, cover loosely and refrigerate for at least 30 minutes.

Nutritional Info:
Per Serving:Serving size: 1 treat, 110 calories (70 from fat), 8g total fat, 3g saturated fat, 0mg cholesterol, 40mg sodium, 10g carbohydrate (2g dietary fiber, 6g sugar), 3g protein

[I've recently bought some carob powder, so was interested in this post, because it would be a low fat alternative to made-up carob bars (Rh- A  nonnie can't do sugar or fat :'( ). I've been adding it to a little raw cacao to make a little stimulating drinkie.  :D]

I love carob. It is delicious stirred into tahini with a little beet syrup. Yummy! I just had a heaping half teaspoon of carob, a few drops of agave on it with a teaspoon of peanut butter! Why should we crave junk when we can eat like a prince/princess!! (I keep sifted carob handy in a spice jar.)

When I get really exhausted, sometimes I'll just stir a Tb of raw carob powder into a short glass of water.  It's not gourmet or anything ;) but it does an amazing job of giving me a quick pick-up.
