While looking for some info for namelessfemm, I ran across this re: grinding your own nut butters at the HFS.
In CR4YT, pg 33, it states: 'Do not grind your own nut butters at HFS. This can result in dangerous levels of aflatoxin, a fungal poison.  :o  :o  All prepared nut butters are already tested for aflatoxin."

So now, it leaves me w/ this question. If grinding our own nut butters at the HFS is not a good idea, what is the dif between doing that and buying whole nuts there and grinding them at home?  :-/

I suspect the reason why this article suggests you not grind nuts at the HFS is because not all stores clean their machines between grindings, or clean thoroughly enough to prevent problems. Also, if you're using nuts bought at the HFS, if they are not bagged but stored in bins or large sacks, there's a much better chance for mold and aflatoxins to grow.

Grinding nuts at home is different IF you clean the nuts first, imo anyway. Soaking overnight, rinsing in water with a few drops of peroxide, and air-drying make a big difference from grinding raw nuts right out of a bin or sack. It's more work, but well worth it.

I just want to clarify that the info I posted came from Dr D.  ;)  Not being contrary or anything , it's just that when you said 'article', it made me think maybe you thought I'd found that on the internet or read it in a book.  ;D ;) :K)

Brig - do you ever toast 'em?  Is there a big difference in taste from store bought and home-made?

What is everone's fav nut butter?  I want to try the Pumpkin seed butter but I'm scared.....and I loathe wasting food - and my picky B hubbs won't eat it for sure....

You can toast them, but they will have a dif flavor and I think some have the opinion that you lose some of the nutrients that way.  Have you ever had store bought almond butter? If not, then you would have nothing to which you could compare tastes, which would be a plus for ya!!  If you make your own, you'll prob need some oil (I use walnut oil) and some good salt.
I think most people eat almond butter (those that can't have peanut butter  :'( ). Some do make walnut butter as well.  I'm w/ you, I want to try pumpkin seed butter also, but havent yet. If I could find a clean brand at WF, I would. You can take ANYTHING back at that store.  ;D

Yes, I toast nuts before grinding them, mainly because I like the flavor better and they seem to digest better for me too. Ditto washing/air drying.

As for homemade versus storebought . . . storebought is a lot smoother, but homemade is generally a lot less expensive, so there's your tradeoff :) I can handle nut butter that's a little more crunchy in the name of saving a large chunk of green. Anyway, I haven't found anyone who makes a walnut butter that's selling in our local HFS.

I haven't had any problems with pumpkin nut butter. I'd say give it a try and see how you feel after you eat it. I'm pretty sensitive to molds, and PNB hasn't caused me any trouble.

We like Kettle brand nut butter. Our son is sensitive to wheat and peanuts also do not set well with him sometimes. When we switched to almond butter, we found it was more delicious than peanut butter.

I do agree that most health food stores do not keep their machines clean. Even the best stores do not seem to clean them as often as they should.

On just a related note, we avoid buying bulk foods from most health food stores. The last two times I was in a Whole Foods, observed people openly "sampling" out of the bins, as if they thought they were free food samples!

There may also be cross contamination of other types of nuts and/or seeds if people are grinding various nuts and/or seeds in the machine, instead of the traditional peanut butter or almond butter.

Some nuts and/or seeds are manufactured with other allergen nuts and/or seeds and other food items that may pose health challenges.

I've made pumpkin seed butter a couple of times. It doesn't come out smooth or creamy unless you add quite a bit of oil (I use walnut), but it's tasty nonetheless. Try making just a little bit, if you are unsure if you'll like it. I've also made walnut butter, which does come out smooth and creamy, and takes only a little bit of (walnut) oil.

I tried soaking and drying and making homemade almond butter with blanched almonds, but that was a bust. No one liked it in my household, and it ended up being tossed. I prefer my almond butter to be made with the skins on.

Store-bought almond butter is my nightly fix! Yum! I like the one from the company ''Yum''. Yep, that's the company name :)

This isn't about homemade nut butter, but Costco had a 26 ounce jar of MaraNatha Almond Butter for $7.99 (I think) last week.  I bought a jar.  That's a much larger jar than the normal size.  I haven't tasted it yet because I still have another brand open in the refrigerator.

::) :o :B...I just decovered "peanutbutter" but without butter, I think they use a veggieoil...from Rapunzel, with crunchy little pieces in.... wow....but after some hours, it comes back and waves back to me :P :-/

I have bought MaraNatha Almond Butter MANY times at Costco and I absolutely love it !!!
I eat it by the spoonfulls .... yummi yum yum :P
however; it's ALOT more expensive here ... I beleive 12.99$ + taxes ... sigh ::) >:(

thanks for the tip..........I have many times thought of getting a memebership at Costco..........guess I just need to do it. And Lisalea, thanks for letting us know this brand is worth buying .  :K)

Firstly, wishing you a warm welcome to BTD and the forums!!  ;D
I just throw some nuts and a bit of oil in my VitaMix and go from there. Add some of each as I go.  Some can make nut butters w/o oil, but for me, I've always had to add some walnut oil. Don't think there is really a recipe, more a personal preference of how you like it.........you know , a little more dry or a little more liquid/oily.
Gave Sachi a small bit of almond butter/banana mix this a.m.   THAT was funny!!  Tried to get him to drink some water to help it down, but he was set on just licking til it was all out of his mouth.  Even tho it was a bit comical, I was watching closely to be sure he didn't choke. Now if he'd drink some water after, I'd have given him more, as he wanted, but too much chance of choking w/o water I think.  :-/

Hi speedy, I just made a batch of walnut butter this morning...I put about two cups of walnuts in the food processor with the metal all-purpose blade and turned it on. While it was mixing, I added a dribble of walnut oil, then waited to see if that was enough. It wasn't, so I dribbled a bit more, until I got the consistency I wanted. Then I scraped it out of the fp and put it into a glass jar with a metal screw top lid. I heard here some time ago that one should keep the walnut butter upside down in the fridge, so I've been doing that; but I don't know why that is.

I use a dollop of nut butter in my morning protein shake; it makes it creamy, and adds that much needed fat for satiation.

I think it distributes the oil content.
I store it the right side up, and mix the nut butter before using.

Whenever I open up a new jar of Almond butter,  I mix it very well since all the oil is on top and afterwards refrigerate it right away; this way the nuts do NOT go rancid !!! ;)
HOWEVER; It doesn't take me very long to eat a jar of MaraNatha Almond Butter

Who can tell me what kind of peroxide to use here? Is it the stuff I get at the pharmacy for $0.89 a bottle?

I used to get mine at the pharmacy. That is the only place I know you can get it. I def would not use the OTC stuff as it has preservatives. :)
