I have some canned salmon I'd like to use to make salmon patties, or salmon croquettes as my mom calls them - anyone have a recipe good for type O's?

My mom made Salmon Potato Patties when I was younger...  Since potato is an avoid for O's, maybe replace the mashed potato with sweet potato...

I don't have exact measurements, but the major ingredients are Canned Salmon, minced onion & garlic, mashed potatoes, egg - raw for binder, and spices as desired.  I think there were some bread crumbs at times, but not necessary.

Mix all ingredients together and fry in ghee until the sides brown and get crispy...

Hope this is enough to get you started...

I believe I used to make them in the past with homemade spelt bread crumbs, fresh parsley, spices.  I probably used egg whites or soymilk to help hold the patties together.

You could probably add any number of interesting ingredients--even finely shredded vegetables could be added to increase your vegetable intake.

Mine are similar to some above.  I am now using the smaller cans of salmon as they are less bony.  One can of drained salmon, a few bread crumbs (I prefer white spelt as Alia Vo suggests), a some minced onions, a little parsley, a whole egg or two. Mix ingredients together, shape into patties, and fry into crispy cakes with a little ghee or olive oil.  That's how my mom used to make them.

T0S...eating the salmon bones is good for calcium.  yuuuuuummmmmm.

I would personally leave the potatoe out. They will be just as good with good ingredients. I have been going thru a salmon pattie spell and cooking them once a week. There is a salmon cake/pattie recipe in the recipe section. Sooo Gooood.

Drea and BuzyBee - I did look in the database for a recipe, but didn't find one.  All the recipes listed under "salmon" call for salmon steaks.  Unless there's someplace else I could look, that I don't know about yet?....
