The last couple of times that I have made ghee it has turned out grainy in texture. I am not sure what I am doing wrong. Has anyone else had this happen? It still tastes good but it would be nice to not have that texture.

it's just due to the brand of butter you're using it seems..........no big deal......... those who make ghee seem to run across this now and again. May I ask what temp you are using - are you doing the oven or stove top method?  :)

ahhhh, did not even think about the brand of butter being the problem. I am using the oven method, at 325.

up your oven temp to 350...........that made a difference in how mine turned out, it seemed. worth a try anyway  ;)   bottom line tho, it's still okay and good to use even if it is grainy  ;D

Yes, Dewdrop as italybound says...it depends on the brand.  I use an organic unsalted and it still comes out a little grainy and I keep using it.   And...upping the temp to 350 F works better...keep an eye...the darker the more burnt taste.   I like just a little little past golden, but not much. ;)   And...lid off works much better. IMHO. ;)

If you don't let it 'cook' too much past golden, just a little tan, it won't taste burnt. Re: the lid off, if you're going to do that be sure to use a DEEP pan or put something under the container to catch the splatter. Mine sometimes 'gets out' even w/ the lid on.  ;)

Yes, yes, yes.  And another yes to the deep pan.  I have a very large white 'Corning' roaster that I use all of the time.  I usually do 3-4 lbs. at a time.  Takes a little bit longer, but then I don't need to do it as often. :D;)

I've been making ghee on the stove top since moving to a house with an electric stove. My ghee has been grainy for the last few batches even though I've been using the same butter for months: Organic Valley Cultured Sweet Butter. I love the flavor and the price is right. When it melts, I don't notice the grainy-ness; only when I take a spoonful in the morning.

Oh how I wish gulfcoastguy...no...just me...the others do eat abit of it since there is no butter or margarine in the house.  Not much though.   Lasts a long time on the shelf.  And...I have always cooked in big amounts.  Saves cooking other days.  Why dirty all those dishes for just a little bit. ;)

Drea, dont you melt your ghee in the mornings?  ;) ;D  I really couldnt stand it any other way?  ;)

Nope; I eat it the way it comes out of the jar :o and it's fine.

you def have a stronger stomach than I.  I'm a sissy,  :'(   I have to melt mine........pretend it's candy...........nahhhhhh,no pretending to it.   Love it like it is.  ;D

We go through a pound of ghee every 8 days at my house, just my daughter and myself!  :-)
Maybe it's time to start making a bathtub of it like Debra does!  :-)  :-)

Four pounds will make enough for four glass containers (dollar store) with plastic lids and that will last me about a month.  Sometimes less...sometimes more.  :D ;)

Guess this is really a good idea. Only have to make it once and lasts a long time. Do you use canning jars or something else debra?  ;)

I use the *glass jars that peanut or tahini butter come in. They are 16 ounces and have metal screw top lids. I save the jar every time I finish the contents, so have several. They are nice to have extras of for when I give ghee away.
