About 6 months ago, a new business opened in our town called Bel Frites.  They make Belgian fries and serve them with a variety of sauces.  Years earlier, I had watched a cooking show that described how Belgian fries are made (basically fried twice).  I decided that some day I was going to try them.  I did so last week and ordered a Roasted Red Pepper Aioli with them.  They were delicious - and yes, I probably suffered consequences from eating a potato.  I later asked the owner of the store if they would ever carry sweet potatoes.  She said she was working on it, but the cooking temperatures were different.

But the sauce was delicious, and I decided to make my own sauce to dip with sweet potatoes.  

I made my basic blender mayonnaise (1T apple cider vinegar, 1/2 tsp. salt, pinch cayenne, 1/4 tsp. dried mustard, 1 whole egg, 1/4 tsp. granulated garlic powder, 1/4 tsp. granulated onion - blended with hand blender - then slowly add 1/2 cup canola oil or other oil - then add 1 T lime juice and blend - then slowly add 1/2 cup canola oil or other oil).  I use the Better Homes and Gardens Blender Mayonnaise recipe but add other spices and lime juice instead of lemon juice.

When the mayonnaise is made, I used the hand blender again to mix in some roasted red peppers (Trader Joes carries a small jar), some lime zest, a pinch of chili powder, a pinch of paprika, about 1/4 tsp. or less of Spice Hunter Greek oregano, and a pinch of fresh thyme.

I will cook my sweet potatoes today, either baked or pan fried and use the dipping sauce.  It tasted very close to what I bought.

I have to loose several stones, so no sweet potatoes for the moment, but one day....

Isa, please could you tell me what kind of analyse do you do with hairs ?

hmmmm 25'ooo different things here and the best, you can't cheat, this is a computerized machina ;D
